GREEN SEASONING CHICKEN FROM JAMBI

Jambi is the name of one of the cities located in Jambi Province, the city became the capital of the province. The province is located on the southern island of Sumatra. Green Seasoning Chicken is one of the specialties of the region. The main ingredient of this dish is chicken, green peppers and other spices. If you want to try cooking it yourself, here's the recipe.

INGREDIENT :
- 1 whole chicken cleaned, cut into 8 pieces
- 8 green hot pepper, halved, seeded, cut into pieces approximately 3 cm long
- 6 clove spring onions, finely sliced

- 3 cm galangal, crushed
- 1 stalk lemongrass, crushed
- 5 lime leaves
- 3 bay leaves
- 800 ml coconut milk obtained from a coconut
- ½ teaspoon salt or to taste
- ¼ teaspoon ground pepper
- 2 tablespoons cooking oil for sautéing

GROUND SEASONING:
- 3 cloves garlic
- 6 clove red onions
- 2 cm turmeric
- 4 candlenuts

HOW TO MAKE:
1. Heat cooking oil, sautéing the ground seasoning together with sliced green peppers until done (fragrant). Add bay leaves, lime leaves, lemongrass and ginger until soft and fragrant.

2. Put the chicken pieces, stir and cook until the color turns brown. Add coconut milk, salt and ground pepper, stir again until evenly distributed. Continue cooking until flavors sank into the chicken, marked with the coconut milk become thick.

3. Chicken green seasoning ready to served with warm white rice.
