MATERIALS
- - 1 kg goldfish
- - 1 tsp salt
- - 1 orange juice, water taken
- - 500 ml of water
- - To taste cooking oil for frying and sauteing
- - 8 spring onions
- - 6 cloves garlic
- - 3 large red chilies
- - 4 cm turmeric
- - 4 cm ginger root
- - 3 cm galangal root
- - 3 bay leaves
- - 2 stalks lemongrass, crushe
- - 1sdt vinegar
- - 1 ½ tsp salt
- - 1 tablespoon white sugar
1. Remove scales, gills and viscera of fish then washed, drained. Marinate the fish with lemon juice mixed with salt, let stand for 25 minutes.
2. Fry the fish until cooked, remove and drain.
3. Saute the ground spices with the bay leaves and lemon grass until fragrant. Add water and other seasonings, stir until boiling.
4. Put goldfish that had been fried, cook until the flavors to infuse and sauce is reduced by half.
5. Remove, Pickled Goldfish ready to serve with hot white rice.
