GOLDFISH PICKLES from BENGKULU

Bengkulu is a city which is the capital of Bengkulu province, located on the Southwest coast of the island of Sumatra, western Indonesia. This is one type of fish dishes typical of Bengkulu.
MATERIALS
  • - 1 kg goldfish
  • - 1 tsp salt
  • - 1 orange juice, water taken
  • - 500 ml of water
  • - To taste cooking oil for frying and sauteing
GROUND SPICES :

  • - 8 spring onions
  • - 6 cloves garlic
  • - 3 large red chilies
  • - 4 cm turmeric
  • - 4 cm ginger root
  • - 3 cm galangal root
OTHER SPICES :
  • - 3 bay leaves
  • - 2 stalks lemongrass, crushe
  • - 1sdt vinegar
  • - 1 ½ tsp salt
  • - 1 tablespoon white sugar
HOW TO MAKE
1. Remove scales, gills and viscera of fish then washed, drained. Marinate the fish with lemon juice mixed with salt, let stand for 25 minutes.

2. Fry the fish until cooked, remove and drain.
3. Saute the ground spices with the bay leaves and lemon grass until fragrant. Add water and other seasonings, stir until boiling.
 4. Put goldfish that had been fried, cook until the flavors to infuse and sauce is reduced by half. 

 5. Remove, Pickled Goldfish ready to serve with hot white rice.
